Old Lasagna with Meat Sauce


This is an old Lasagna Recipe which includes the Meat Sauce. Makes 6 to 8 servings.


  • 5 cups of Meat Sauce (see below)
  • 1 package Lasagna (1 lb.) Noodles
  • 1 lb. Ricotta or Cottage Cheese
  • 1/2 cup of grated Parmesan
  • 1/2 lb. Mozzarella, thinly sliced
  • Boiling salted water


Cook noodles in salted water until almost tender. Rinse and drain. Spread half the drained noodles over bottom of lightly oiled 13 x 9 x 2 inch baking dish. Using half of each of the remaining ingredients, spread alternate layers of each on top of noodles. Repeat, starting with noodles and ending with mozzarella slices. Bake in oven at 350 for 30 minutes until bubbling and  hot. Makes 6 to 8 servings.

Meat Sauce

  • 1 cup chopped Onion 
  • 2 cloves of Garlic, minced
  • 1/2 cup of Celery, minced
  • 1/4 cup of Olive Oil
  • 2 lb. ground Beef
  • 1 1/2 Tbsp. Salt
  • 2 1/4 cans (28 fl oz.) of Diced Tomatoes
  • 2 cans (6 oz. ea.) Tomato paste
  • 1/2 cup of Water
  • 2 tsp. of Sugar
  • 1 tsp. Oregano


Cook the Onion, Garlic and Celery in oil over low heat until soft but not brown. Add beef and brown over medium heat; break up meat with the side of a spoon as it cooks. Add and stir in salt and the remaining ingredients. Cover and bring mixture to a boil. Reduce heat and simmer, stirring frequently for 3 hours or until thick. Chill; skim off fat. Store sauce, covered, in the refrigerator or freeze in containers. Makes about 2 1/2 quarts.
